Mexican Chorizo Burrito Recipe

Ingredients:

  • 200 g of chorizo (Mr. Charro)
  • 1 cup of cooked rice
  • 1/2 chopped onion
  • 1 chopped red bell pepper
  • 1 chopped green bell pepper
  • 1 cup of refried beans
  • Flour tortillas
  • Chopped cilantro (optional)
  • Lime

Instructions:

  • Cook the chorizo: In a large skillet, cook the chorizo until it is browned and crispy.
  • Remove excess fat.
  • Sauté the vegetables: In the same skillet, add the onion and bell peppers. Cook until tender.
  • Assemble the burritos: Warm the flour tortillas.
  • Place a portion of cooked rice and refried beans in the center of each tortilla.
  • Add the cooked chorizo and sautéed vegetables.
  • Sprinkle chopped cilantro if desired.
  • Roll up the tortillas to form the burritos.
  • Serve with lime to squeeze to taste.
