Ingredients:
- 200 g of chorizo (Mr. Charro)
- 1 cup of cooked rice
- 1/2 chopped onion
- 1 chopped red bell pepper
- 1 chopped green bell pepper
- 1 cup of refried beans
- Flour tortillas
- Chopped cilantro (optional)
- Lime
Instructions:
- Cook the chorizo: In a large skillet, cook the chorizo until it is browned and crispy.
- Remove excess fat.
- Sauté the vegetables: In the same skillet, add the onion and bell peppers. Cook until tender.
- Assemble the burritos: Warm the flour tortillas.
- Place a portion of cooked rice and refried beans in the center of each tortilla.
- Add the cooked chorizo and sautéed vegetables.
- Sprinkle chopped cilantro if desired.
- Roll up the tortillas to form the burritos.
- Serve with lime to squeeze to taste.
